Desserts

I was going to put these in yesterday's food post, but really, desserts deserve their own post right?!


Just what they sound like - delicious lemony heaven in a little square!  These were pretty easy to make and are full of lemon flavor.  I love lemon, but I still thought the glaze was too tart, so I added an extra cup of powdered sugar to it, and I only spread half of it on top.  These will be a perfect coffee group treat!

Lemony Lemon Brownies

  • 3/4 cup all-purpose flour 
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice

  • Tart Lemon Glaze
  • 1 rounded cup powdered sugar
  • 4 tablespoon lemon juice
  • 8 teaspoons lemon zest

Preheat oven to 350°F. Grease/Spray an 8-by-8-inch baking dish with butter/cooking spray and set aside. 

Zest and juice two small/large lemons; set aside. {whatever you have}

In the bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined. 

In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined. Pour into the flour mixture and beat at medium speed until smooth and creamy, about 2 minutes. 

Pour into baking dish and bake for 23-25 minutes, or until just starting to turn golden around the edges and a toothpick inserted into the center of the brownies comes out clean. Allow to cool completely before glazing.  Do not overbake, or the bars will be dry. 

When brownies are cooled completely, make the glaze...sift the powdered sugar, add lemon zest and juice, and whisk together all three ingredients. Spread 1/2 the glaze over the brownies with a rubber spatula.  Let glaze set.  Spread the remaining glaze over the bars, and let it set.  This glaze does not harden like most.  Cut into bars, and serve!

These were/are AMAZING!  Just like a funnel cake at the fair but with an apple slice in the middle - so it's totally healthy! :)
Make the batter

Slice up the apples

Dip the apples in the batter, drop them in the oil and fry them up!



Roll in cinnamon and sugar

Enjoy!

Ingredients
1/2 cup plus 2 tblsp sugar
3/4 tsp ground cinnamon
2 cups buttermilk or milk
4 tsp vegetable oil, plus 2 cups for frying
2 eggs, lightly beaten
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
4 med tart apples, cored, peeled and cut into 1/2" thick rings (I used Braeburn)

Directions
1. In a medium bowl, combine 1/2 cup sugar and cinnamon.  In another bowl, whisk milk, 4 tsp oil and eggs.  Stir in flour, 2 tbsp sugar, baking powder and salt.

2. In a large, heavy, high-sided skillet, heat 2 cups oil until it registers 375 degrees with a candy thermometer (or if water spatters when you flick drops of it in).  In batches, coat apples in batter and fry until golden brown, about 2 minutes on each side.

3. Transfer to a paper towel-lined baking sheet to drain.  Toss apples in cinnamon-sugar and serve immediately.

Last night we only used 1 apple and that was plenty for our family for dessert.  It makes a ton of batter, so we saved the rest and will probably make some more tomorrow night.  These would be a hit for a get-together with friends.
